For the Bread:
- 1/2 cup unsalted butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups shredded apples (Honeycrisp, Fuji, or Granny Smith)
- Optional: 1/2 cup raisins or chopped walnuts
For the Streusel Topping:
- 3 tablespoons unsalted butter, melted
- 1/3 to 1/2 cup all-purpose flour
- 1/3 to 1/2 cup brown sugar
- 1 teaspoon ground cinnamon (optional)
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, cream together the softened butter, white sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing well.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the shredded apples and optional add-ins.
- Pour the batter into the prepared loaf pan.
- For the streusel topping, combine melted butter, flour, brown sugar, and optional cinnamon/nuts. Mix until crumbly and sprinkle evenly over the batter.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Cover with foil if the top browns too quickly.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Notes
- Best apple varieties: Honeycrisp, Fuji (sweet) or Granny Smith (tart)
- Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
