  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups shredded apples (Honeycrisp, Fuji, or Granny Smith)
  • Optional: 1/2 cup raisins or chopped walnuts

For the Streusel Topping:

  • 3 tablespoons unsalted butter, melted
  • 1/3 to 1/2 cup all-purpose flour
  • 1/3 to 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, cream together the softened butter, white sugar, and brown sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing well.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the shredded apples and optional add-ins.
  7. Pour the batter into the prepared loaf pan.
  8. For the streusel topping, combine melted butter, flour, brown sugar, and optional cinnamon/nuts. Mix until crumbly and sprinkle evenly over the batter.
  9. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Cover with foil if the top browns too quickly.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
