Creamy Homemade Butterscotch Pudding with Whipped Cream
Ingredients:
1/2 cup packed brown sugar
2 tablespoons cornstarch
2 cups whole milk
1/4 cup heavy cream
2 tablespoons butter
1 teaspoon vanilla extract
Whipped cream (optional) for topping
Butterscotch sauce (optional) for drizzling
Directions:
- In a medium saucepan, whisk together brown sugar and cornstarch.
- Slowly add the milk and heavy cream, whisking until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble, about 5-7 minutes.
- Remove from heat and stir in the butter and vanilla extract until fully combined.
- Pour the pudding into serving dishes and refrigerate for at least 2 hours or until set.
- Serve chilled, topped with whipped cream and a drizzle of butterscotch sauce if desired.
