For the Sauce:

  • 28 oz crushed tomatoes
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon sugar

For the Filling:

  • 16 oz mozzarella cheese, sliced or shredded (Galbani, Polly-O, or Belgioioso)
  • 4 oz cheddar cheese, shredded (Cabot, Tillamook, or Cracker Barrel)
  • 2 oz Parmesan cheese, freshly grated
  • 1 lb Italian sausage, cooked

Instructions

  1. Prepare the Dough: In a mixing bowl, combine flour, cornmeal, salt, sugar, and yeast. Add warm water and softened butter. Mix until a dough forms. Knead and shape into a 9×12-inch rectangle, cover, and chill for 45 minutes.
  2. Laminate the Dough: Roll the dough flat, spread with melted butter, fold, and roll again. Chill for another 30 minutes.
  3. Make the Sauce: In a saucepan, heat olive oil. Sauté onions and garlic until fragrant. Add crushed tomatoes, oregano, basil, red pepper flakes, and sugar. Simmer for 30–35 minutes.
  4. Assemble the Pizza: Preheat oven to 425°F (215°C). Grease a 9×2-inch deep dish pan with olive oil. Press the dough into the pan, covering the bottom and sides.
  5. Layer the Pizza: Start with mozzarella cheese, followed by cooked sausage. Spread tomato sauce on top. Sprinkle Parmesan cheese.
  6. Bake: Bake for 25–30 minutes. Cover crust edges with foil after 15 minutes to prevent burning. Let cool for 10 minutes before slicing.
