- Baking Powder – 1 ½ teaspoons
- Eggs – 3 large
- Lemon Extract – 1 teaspoon
- For the lemon glaze:
- Powdered Sugar – 2 ½ cups
- Lemon Zest – Zest of 2 large lemons
- Lemon Juice – 1-2 tablespoons
Instructions
- Cream the sugar and butter until light and fluffy.
- In a separate bowl, whisk the flour and baking powder. Gradually add to the butter mixture.
- Beat in the eggs one at a time.
- Stir in lemon extract.
- Drop dough onto a baking sheet using a small cookie scoop.
- Bake at 400°F (200°C) for 10-12 minutes.
- For the glaze: In a medium bowl, mix powdered sugar, lemon zest, and lemon juice until smooth.
- Once cookies are cool, dip the tops in the glaze and allow to set.
