For the Crust:
- 30 Oreo cookies

- 3 packages (8 oz each) cream cheese
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup granulated sugar
- 25 Oreo cookies (broken into chunks)
Instructions
- Preheat oven to 325°F (163°C). Prepare a 9-inch springform pan.
- Grind Oreos into fine crumbs and mix with melted butter. Press into the pan and bake for 10 minutes.
- Beat cream cheese until smooth. Add sugar, eggs, and vanilla extract, mixing until creamy.
- Fold in the broken Oreo chunks.
- Pour batter over the crust and bake for 50-60 minutes.
- Cool in the oven for 1 hour, then at room temperature for another hour. Refrigerate for at least 5 hours.
- Decorate with whipped cream, ganache, or extra Oreos.
