Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C). Grease a mini muffin tin or use liners.
- Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
- Mix Wet Ingredients: In another bowl, whisk eggs, milk, melted butter, and vanilla extract.
- Combine: Gradually fold the wet ingredients into the dry ingredients. Mix gently until just combined (batter should be slightly lumpy).
- Add Mix-ins: Fold in optional mix-ins like chocolate chips or berries.
- Fill Muffin Tin: Spoon the batter evenly into the prepared mini muffin tin, filling each cup about ¾ full.
- Bake: Bake for 15-18 minutes or until the tops are golden and a toothpick comes out clean.
- Cool & Serve: Let cool for 5 minutes before removing. Serve warm with maple syrup or enjoy plain!
Notes
- For extra flavor, sprinkle cinnamon or nutmeg into the batter.
- These muffins freeze well. Cool completely, store in an airtight container, and freeze for up to 3 months.
- Reheat in the microwave for 30 seconds or in a 350°F oven for 5 minutes.
